Backyard Fireball: It’s BBQ Grillin’ Time!

The Patron Saint of Texas BBQ

I realize some of you in other parts of the country (and the world) are still gettin’ winter weather. Here in Texas it’s grilllin’ time. If you are in Minnesota or New York, stop yer bitchin’ for a minute and see if you can get a whiff of my charcoal fire.

Ah, sorry to be taunting you like that. Here in Texas barbecue is a religion, like football and drivin’ fast. Barbecue is sittin’ on the patio, a Weber grill smokin’ some ribs while you listen to rock and roll and swig a cold beer. Barbecue is more than just tossing some wieners on a fire. It’s smoking a succulent side of beef, making sure those pork ribs are just right, and poking a fork in a chicken thigh to make sure the juices run clear. It’s real cookin’!

It’s also potato salad, watermelon, beans in barbecue sauce, potato chips, Big Red soft drinks and lots of cold, cold beer. You got all that, all you need is some fine music.

I’m fixin’ to barbecue up some ribs this afternoon – with temperatures at my house expected to be around 95 today, it feels like freakin’ winter.  Yeah it’s been hotter than hell around here lately, but that can’t stop me from barbecuin’!

What about you?  All you need is a fire of some sort, and some meat – and some barbecue sauce to cover up what you screw up.  So let’s get started … you light the pit and I’ll cue up some tunes!

Backyard Fireball: Barbecue Time! Again

Memorial Day is a couple weeks away, but here in Texas we’ve been barbecuing since … January.  I read somewhere that May is National Barbecue Month.  Like I need a reason to play loud music outdoors, drink beer and light fires.  Briskets – smoke ’em if you got ’em.

Actually, I am usually unsuccessful cooking brisketsBBQ sauce on a pit for some reason.  I’m hell on wheels when it comes to chicken, ribs, burgers/hot dogs and Earl Campbell sausage links.  Despite what Hank Hill says, I recommend a charcoal fire, some pecan or hickory wood for smoke and lots of Stubb’s barbecue sauce.

A backyard barbecue is so enjoyable that I do it at least two or three times a week.  Cookin’ meat on indirect heat (way off the coals, lid on the pit like an oven), a cold beer or five, the kids comin’ outside wondering why it takes two hours to burn four burgers.

Ah!  I can smell the smoke already.  Join us for a little barbecue, won’t you?

The weather’s getting warmer and it’s about time to fire up the grill.  Soon you’ll be getting that whiff of charcoal (and charcoal lighter), and your stomach will say, “Ribs, sausage, brisket, chicken, please!”
