Backyard Fireball: Memorial Day Grillin’!

The big Memorial Day weekend is here and we want to know: what are you grillin’ this holiday?

Here in Texas barbecue is a religion, like football and drivin’ fast. Barbecue is sittin’ on the patio, a Weber grill smokin’ some ribs while you listen to rock and roll and swig a cold beer. Barbecue is more than just tossing some wieners on a fire. It’s smoking a succulent side of beef, making sure those pork ribs are just right, and poking a fork in a chicken thigh to make sure the juices run clear. It’s real cookin’!

It’s also potato salad, watermelon, beans in barbecue sauce, potato chips, Big Red soft drinks and lots of cold, cold beer. You got all that, all you need is some fine music.

The Patron Saint of Texas BBQ

I realize some of you in other parts of the country (and the world) are still gettin’ winter weather. Here in Texas it’s grilllin’ time. If you are in Minnesota or New York, stop yer bitchin’ for a minute and see if you can get a whiff of my charcoal fire.

Fixin’ up some chili

Here come those weird days of winter, after the holidays and before the Super Bowl, where we promptly forget about our New Year’s resolutions and do just about anything to stay warm and interested.  If you live in a part of the country where it’s cold – and that’s pretty much any place except Texas or Florida – you may want to give some thought to cookin’ up a big pot o’ chili.

A number of regions lay claim to creating the humble bowl of red, but the story I’ve heard most often is that the spicy meat concoction was created by the chili queens of 1880s-era San Antonio who came up with the recipe we still use and enhance to this day.   And of course, different cooks will put different ingredients in their versions of chili.

The big argument is whether or not to add beans to chili.  Now most enlightened thinkers say no, beans take up space that more meat could better occupy.  My in-laws, who live up in New York state, swear up and down that true chili has beans in it but what do they know – they consider grilled weenies real barbecue.  I suppose you can put anything you want in chili – including turkey, pork, duck, even beans – as long as you can find someone to eat it.  Count me out! (I saw a TV movie one time, I think it had Willie Nelson and Kris Kristofferson in it, and although the title escapes me I will never forget what one character said: “I’d have to kill somebody who put lima beans in my chili.”  Or something like that.)

A righteous pot of chili ought to contain some sort of beef, chiles (or chili powder) and maybe some tomato sauce if you roll that way.  For years I have used the recipe you see at the top of this post (click to enlarge it), supplied on a handy post card by the Lone Star Brewing Company of San Antonio, Texas.  I am fairly sure you can buy everything the recipe requires pretty much any place in the country; if you can’t find coarse ground beef you can always slap in a pound or two of hamburger.  My daughter went off to college and now she’s on some kind of anti-beef kick; now when she’s home I gotta use ground turkey in my chili.  That works, too.

Years ago I got this book, A Bowl of Red, by Texas writer Frank X. Tolbert and that’s supposed to be the bible of chili heads nationwide.   I kind of think this guy was full of bull (or Lone Star beer) when he wrote this book, because he even sings the praises of chili made at Chasen’s restaurant in Beverly Hills for movie stars, and he talks about how great some brands of canned chili are.  Well, I am partial to Wolf Brand in a can – but with no beans!

Anyway, the followers of this Tolbert fellow (he died a while back) still operate some kind of International Chili Appreciation Society and stage cookoffs in a place called Terlingua, along the Texas-Mexico border in the middle of freakin’ nowhere.  I never was a follower of organized religion, so I really don’t know what these chili heads stand for but like those beans, you are quite welcome to explore on your own.

Chili is of course the national dish of Texas, and when you are in Austin there is one great place to get some chili.  It’s called the Texas Chili Parlor, and it’s located on Lavaca Street near the Capitol.  They have all kinds of chili and other stuff (their enchiladas are pretty tasty) and they’ll even put beans in your bowl for you while looking the other way.  If you order their super-hot XXXX chili, before they serve it you have to sign a release saying you won’t hold them responsible for a heart attack or any catastrophes in your underwear.

I like the chili over at Shady Grove too, that’s a pretty nice place.  San Antonio has a bunch of great places to get chili (try La Paloma or Casa Rio on the Riverwalk) and in Houston, well, the best chili I’ve had here is at my house.  Check out the recipe above and play some of these tunes.  Enjoy your chili, with or without beans (remember to open a window), and here’s hoping it keeps you warm this winter!

Rock Moment: Texas Cosmic Cowboys

It’s been a busy week for us, and we must apologize for not tending the blog recently.  We’ve done a few interviews in advance of South by Southwest, those are coming soon and we have some other cool stuff on the horizon – promise.

Today we want to give you something for the weekend … a little remembrance of the Texas “cosmic cowboy” movement of the 1970s.  The other day we mentioned Shiva’s Headband, the psychedelic country rockers partially responsible for the creation of the Armadillo World Headquarters in Austin.   But even before the Armadillo, Texas’ capital city was a mecca for young longhairs who liked country music.

I suppose Michael Murphey coined the phrase “cosmic cowboy” back in 1973, on his album Cosmic Cowboy Souvenir.  He also sort of laid out the blueprint for the movement in “Cosmic Cowboy” from that album … “Lone Star sippin’ and skinny dippin’/and steel guitars and stars.”  You could say a cosmic cowboy was one quarter redneck and three quarters hippie, a guy who’d happily loan you his pickup truck and his wife.

New Stuff: Texas

This weekend, Austin opens its doors to tens of thousands of people who will attend the big three-day Austin City Limits Festival.  Kings of Leon, Dave Matthews Band, Pearl Jam, Levon Helm and many others will play … but we’re not gonna go.  Tickets are a little pricey, and it’s been sold out for months anyway.  So we’re just gonna sit back and enjoy some new music from around the Lone Star state.  You can join us: pull up a chair, and it’s free.

The best songwriter in Texas, hands down, is Guy Clark.  His new album is Sometimes The Song Writes You, and all I can add to that is “Amen, brother.”  If you ever wanted to know (or not), Guy likes to write his songs on graph paper – you know, the kind with little blue squares.  “It’s just the tactile part of it, I guess,” he says.  “I write in longhand, on graph paper. It kind of keeps you in a straight line.”

The second-best songwriter in Texas – and he’ll readily agree with that – is Robert Earl Keen.  His newest is called The Rose Hotel, and it has lots of great playin’, nice singin’ and guest appearances by Greg Brown and Billy Bob Thornton.  Robert’s songs are funny and sometimes very insightful but they’re always keen.  Sorry.

There’s a place in Austin, it’s called Barton Springs.  Even on these blistering hot days (temps in the 100s) the damn water is ice cold.  You leap into this pool at your own risk because you’re going from air that’s around 105 degrees into water that’s about 68 degrees.  It may not seem so bad to you folks up in the snow belt but try it some time.  I know for sure that my heart can’t take it – not like it could when I was younger.  Instead, my heart is definitely open to this Lone Star flavored refreshment:

Backyard Fireball: Barbecue Time! Again

Memorial Day is a couple weeks away, but here in Texas we’ve been barbecuing since … January.  I read somewhere that May is National Barbecue Month.  Like I need a reason to play loud music outdoors, drink beer and light fires.  Briskets – smoke ’em if you got ’em.

Actually, I am usually unsuccessful cooking brisketsBBQ sauce on a pit for some reason.  I’m hell on wheels when it comes to chicken, ribs, burgers/hot dogs and Earl Campbell sausage links.  Despite what Hank Hill says, I recommend a charcoal fire, some pecan or hickory wood for smoke and lots of Stubb’s barbecue sauce.

A backyard barbecue is so enjoyable that I do it at least two or three times a week.  Cookin’ meat on indirect heat (way off the coals, lid on the pit like an oven), a cold beer or five, the kids comin’ outside wondering why it takes two hours to burn four burgers.

Ah!  I can smell the smoke already.  Join us for a little barbecue, won’t you?

It’s That Chili Time Of The Year

Those cool fronts are startin’ to roll in, and here in Texas that means chili.  According to legend, the spicy meat concoction may have been born in Mexico but the chili queens of 1880s-era San Antonio most likely came up with a prototype recipe that we still use and enhance to this day.   A righteous pot of chili ought to contain some sort of beef, chiles (or chili powder) and tomato sauce if you like that.

Now here in Texas there are disagreements about things every day.  But nothing can get quicker to the point of fistfights than the issue of Beans vs. No Beans in a pot of chili.  Most true chili aficionados agree that beans have no place in chili; folks up in the Northeast (we call ’em Yankees) like to load up with beans, sour cream and all kinds of alien stuff.  If you want to put beans in your chili, fine; just don’t put ’em in mine.  And open a window, would you?

The National Beer Of Texas

Lone Star Beer – it’s a Texas thing.  Since the end of Prohibition, Texans have enjoyed this brew which shares the nickname of our state.   As long as I could remember, it tasted frankly like horse piss in a can.  For a long time it was brewed in San Antonio but in 1996 the company was bought out by Stroh Brewing of Detroit.  After that, you rarely saw Lone Star any more.

And it was too bad: Lone Star’s brewery in San Antonio was one of the greatest places in the world to visit.  They had exhibits featuring all kinds of exotic animals, a crazy walk-through wax museum depicting the history of Texas (complete with an Indian scalping some stupid settler) and a real cowboy bar where they gave you little cups of beer.
